LOUISIANA TOMATOES AND OKRA

Vegetable cooking spray
1 tsp vegetable oil
1 cup chopped onion
3/4 cup chopped green pepper
3 medium tomatoes, peeled and quartered
2 cups sliced fresh okra
1/4 tsp salt
1/4 tsp pepper

Coat a large skillet with cooking spray; add oil. Saute onion and
pepper until tender. Add remaining ingredients; cover. Cook 5
minutes, stirring occasionally.  Makes 7 servings.
