Sweet and Sour Onions 450 gram (1 lb) button onions 25 grams (1 oz) unsalted butter 25 grams (1 oz) caster sugar 50 ml. (2 fl oz) white wine vinegar salt and freshly ground black pepper Blanch the onions in boiling water for 5 minutes. Drain off the water. Melt the butter in a frying pan. Once bubbling, add the onions and cook over a medium heat until golden. Add the sugar and continue to cook for a further 1 minute. Now add the white wine vinegar and boil to reduce until almost dry. Alternatively, the sugar and vinegar can both be added at the same time to create a syrup and almost sauce consistency. Season with salt and pepper and serve. Notes: These serve really well as a vegetable or to go with another dish. Grilled chicken breasts or wings is delicious with these sweet and sour onions, as is grilled or sauted liver. But one of my favourities is roast turbot or halibut with the onions trickling over, giving that sweet and sour flavour to work with the bitter sweetness of the fish.
