Sweet Potatoes With Lemon yield: 3 cups (3 servings) 3 cups peeled and cubed sweet potatoes 1 tablespoon fresh lemon juice 1 tablespoon freshly chopped Italian parsley Salt Freshly ground black pepper Preheat the oven to 375 F. Place the sweet potatoes in a covered baking dish with just enough water to coat the bottom of the pan. After they've baked for 45 to 50 minutes, until tender, add the lemon juice and parsley.
