Spinach & Potatoes in Broth 2 Tbsp olive oil 2 garlic cloves, minced 1 cup chicken broth 1 cup water 4 medium potatoes, peeled quartered, and parboiled 2 pounds spinach, well washed Place oil in large saucepan and gently brown the garlic. Add chicken broth, water, and the potatoes. Add spinach. Cover and cook 15 minutes. Printable version: spinach-potatoes.txt.
