SPINACH WITH PARMESAN AND PINE NUTS (from www.culinarycafe)
  
1 Tbs. olive oil
3 garlic cloves, minced
2 lbs. spinach leaves, washed and trimmed
2 Tbs. grated Parmesan
1/4 tsp. salt
1/4 tsp. pepper
2 Tbs. pignoli, toasted

Heat olive oil in large skillet.  Saute garlic.  Gradually add the
spinach and saute 2-3 minutes until all the leaves are just wilted.
Remove from the heat and toss in the rest of the ingredients.
