SOUTHERN SMOTHERED GREENS 1 bunch collard greens 2 cups chopped ham 3 slices bacon 1 1/2 tablespoons accent (optional) 2 tablespoons sugar 1 1/4 cup water 1/2 teaspoon salt ground pepper to taste Wash greens thoroughly and cut fine. In heavy skillet, fry bacon till very crisp. remove and set aside. Fry ham until brown. Crumble bacon and return to pot. Add greens and water. Sprinkle sugar and accent over greens. Cover. When greens have simmered down, stir all together. When almost done, about 30 minutes, add salt and pepper and cook till done. Add more salt if necessary. Printable version: smothered-greens.txt.
