Scalloped Cabbage 3 c. cooked, shredded cabbage 3 T. butter 3 T. flour 1/2 tsp. salt 1/8 tsp. pepper 1 1/2 c. milk 3/4 c. grated cheese buttered bread crumbs While cabbage cooks, make a white sauce: melt butter, add flour and seasonings, and blend thoroughly. Stir in milk, and stir until thickened. Drain cabbage. Alternate layers of cabbage, cheese and sauce. Top with buttered crumbs. Bake at 350 for 20 mins. or until crumbs are barely browned. Note: when I am in a hurry, I frequently just stir the drained cabbage into the white sauce; sprinkle cheese over, and stir until it melts; then I omit the crumbs; we eat this as a main dish, served with cornbread) Printable version: scallop-cabbage.txt.
