Sauteed Mushrooms 2 tablespoons oil 1 1/2 pounds white button mushrooms, cleaned, trimmed, halved 1 tablespoon sesame seeds, toasted 1 tablespoon grated fresh ginger 2 tablespoons mirin 2 tablespoons soy sauce 1 teaspoon toasted sesame oil 2 scallions, sliced very thin Heat 1 tablespoon oil in 12-inch skillet over medium-high heat until hot. Add mushrooms and cook, stirring occasionally, until mushrooms release liquid, about 5 minutes. Increase heat to high and cook, stirring occasionally, until liquid has evaporated, about 8 minutes more. Add remaining oil, reduce heat to medium and continue to cook, stirring occasionally, until mushrooms are browned, about 8 minutes more. Add sesame seeds and ginger and cook, stirring constantly, until ginger is fragrant, about 30 seconds. Add mirin and soy and cook stirring constantly, until liquid has evaporated, about 30 seconds. Remove from heat and stir in sesame oil. Transfer to a serving dish, sprinkle with scallions and serve. Printable version: sauteed-mushrooms08.txt.
