Salt Potatoes Serves 4. 2 pounds small new potatoes 1 cup kosher salt melted butter to taste Place the potatoes in a medium saucepan. Cover with cold water and add the salt. Bring the potatoes to a boil and cook for 20 to 30 minutes until tender. Drain. The salt will form a white film on the potatoes. Place in a serving dish and drizzle with melted butter.
