Roasted Green Beans
Makes 2 servings

1/2 pound green beans (not the tiny haricots verts), trimmed but left whole
1 1/2 teaspoons olive oil
Salt and freshly ground black pepper
Crumbled gorgonzola cheese (optional garnish)

Adjust oven rack to middle position and preheat to 450 degrees.
Spread green beans in a 9-by-13-inch pan or a small baking sheet.
(They should be in, or almost in, a single layer.) Drizzle with oil
and 1/4 teaspoon salt and toss well.   Place in the oven and roast
for about 15 to 18 minutes, tossing beans well with tongs or shaking
pan about halfway through cooking. Remove when they become slightly
shriveled and have a few dark brown spots. Err on the side of
overcooking rather than undercooking.  Season with additional salt,
if needed, and pepper, garnish with gorgonzola and serve.
