Roasted Patty Pan Squash Serves: 6 1 pound patty pan squash, trimmed and halved 2 teaspoons olive oil kosher salt to taste Preheat the oven to 450 F. Toss the squash, olive oil and salt together. Spread the squash out on a baking sheet in a single layer. Roast the squash on the top rack of the oven until they are tender when pierced with a knife, about 10 minutes.
