BLUE CHEESE POTATOES

1 lb. white or russet potatoes, peeled and quartered
4 garlic cloves, peeled
1/4 cup crumbled blue cheese
1/4 cup buttermilk
2 Tbsp. chopped fresh parsley
2 Tbsp. chopped fresh chives (optional)
1/4 tsp. salt
1/4 tsp. pepper

Bring a large pot of water to a boil. Add potatoes and garlic, cook
until potatoes are fork-tender, about 20 minutes. Drain well. Return
potatoes and garlic to pot and cook over low heat for 2 minutes.
Remove from heat. In a large bowl, combine potatoes and garlic,
blue cheese and buttermilk.  Using a potato masher or fork, mash
potato mixture until smooth and creamy.  Stir in parsley, chives,
salt and pepper. Place in a serving bowl. Serve immediately.

Makes 4 servings.
