MUSHROOMS IN WINE SAUCE Serves 4-6. 1 clove garlic 1 scallion 2 Tbsp. parsley 2 Tbsp. butter 1 lb. fresh mushrooms 4 Tbsp. butter 1/4 cup dry sherry Saute garlic (minced), scallions (sliced), parsley (chopped) in 3 tablespoons butter until softened. In separate pan saute fresh, cleaned and trimmed mushrooms in 4 tablespoons butter about 5 minutes. Add first mixture to mushrooms. (This may be prepared a short time in advance up to one hour before serving). Immediately before serving add sherry. Bring to boil and lower to simmer to remove alcohol.
