Mushrooms Royale
Serves 2-4
300g (11 oz) potatoes, peeled and cut
75g (3 oz) butter
250g (9 oz) mushrooms, washed and sliced
1/2 red pepper, sliced
1/2 yellow pepper, sliced
25g (1 oz) flour
150ml (1/4 pt) 1 % butterfat milk
10ml (2 tsp) mustard
15 ml (1 tbsp) lemon juice
Cook potatoes and mash them. Melt the butter and fry the mushrooms
and peppers for 5 minutes. Stir in the flour and milk and bring to
the boil. Stir in the mustard and lemon juice and place in an
ovenproof dish. Spread or pipe the potato over the top and grill
until golden.
