MUSHROOMS PAPRIKA Serves 4 2 tbs. butter 1 medium onion, finely chopped 1 lb. fresh mushrooms, sliced or coarsely chopped 2 tsp. Hungarian sweet paprika dash cayenne pepper 2 tbs. tomato paste 2/3 cup sour cream 1/2 tsp. salt 2 tbs. finely snipped fresh dill In a large skillet heat the butter over moderate heat. Add the onion and saute, stirring, until it just begins to turn golden. Add the mushrooms and saute, stirring, until they are just very lightly browned. Stir in the paprika and the cayenne and saute a few minutes more. Stir in the tomato paste, the sour cream and the salt. Mix well then bring to the simmer and cook over low heat for a few minutes. Stir in the dill and mix well. Can be served as is, on toast, or with rice or buttered noodles. A few spoonfuls will turn a plain baked potato into a memorable dish.
