Old Finnish Mushroom-Cabbage Casserole 1/3 cup pearl barley 1 egg, lightly beaten 1 1/2 cups milk 1 teaspoon sea salt 4 cups cabbage, shredded 1/4 teaspoon white pepper 1 cup carrots, grated 1 Tablespoon butter or oil 2 cups of mushrooms, sliced 2 Tablespoons bread crumbs Soak the barley in milk 4 to 5 hours overnight. Preheat the oven to 400 F. Mix all the vegtables together, and add the milk-barley mixture. Add the lightly beaten egg, salt and pepper. Mix well. Grease a 2 quart ovenproof dish and pour the mixture in. Press down. Sprinkle the top with bread crumbs. Bake 1 1/2 hours. Printable version: mushroom-cabbage.txt.
