Mexican Yellow Squash 2 large yellow squash 2 tomatoes 1 small red onion 1/2 cup picante sauce 1/4 cup water 1/2 cup mozzarella Cut the squash, tomatoes and onions in bite-sized elongated slices. Add water and picante. Cook over medium heat until tender and most of water is cooked off. Pour into serving dish.
