Lemon Cauliflower

1/4 cup chopped fresh parsley, divided
1/2 tsp. grated lemon peel
6 cups. cauliflower florets
1 tbsp. reduced fat margarine
3 cloves garlic, minced
2 Tbsp. lemon juice
1/4 cup grated Parmesan cheese

Place 1 tbsp. parsley, lemon peel and 1-inch water in a large
saucepan. Place cauliflower in a steamer basket and place in
saucepan. Bring water to a boil over medium heat. Cover and steam
for 15 minutes or until cauliflower is crisp-tender. Remove to a
bowl; keep hot. Reserve 1/2 c. hot liquid. Heat margarine and garlic
in a small saucepan over medium heat. Cook and stir for 2 minutes.
Stir in lemon juice and reserved liquid. Spoon lemon sauce over
cauliflower. Sprinkle with remaining 3 Tbsp. parsley and cheese
before serving.  Makes 6 servings.
