Lemon Carrots 1 lb. carrots, peeled and thinly sliced 1/4 cup cilantro or parsley, chopped 1 Tbsp lemon juice 1/2 tsp. lemon zest, grated 1 Tbsp unsalted butter Place carrots in a steamer basket over boiling water. Cover saucepan and steam 7-8 minutes or until carrots are tender. Transfer carrots to a bowl. Toss with remaining ingredients and pepper to taste. Makes 4 servings.
