CREAMY LEEK POTATOES for 2 2 large potatoes, chopped 30 g butter 1 clove garlic, crushed 1/2 small leek, finely chopped 1/2 tsp seasoned pepper Boil, steam or microwave the potatoes until tender, drain, mash well. Return potato to hot pan, stir over heat for about 1 minute until dry. Heat butter in pan, add garlic, leek and pepper and cook until the leek is soft.
