CURRIED SWEET POTATO LATKES

2 large sweet potatoes
1 large russet potato
3 yellow onions
2 large eggs, slightly beaten
1/3 c. matzo meal
2 t. salt
1 t. cracked black pepper
2 t. sugar
1 t. brown sugar
1 t. baking powder
1/2 t. cayenne powder (pepper)
2 t. curry powder
1 t. cumin
3/4 c. canola oil

Grate potatoes in a food processor, or use a grater.  Grate onions
over the potatoes.

Squeez liquid out of the mixture with hands or press through a
dishtowel.  Repeat this process if necessary.

Add eggs, matzo meal, and spices and mix well.

Coat a skillet with canola oil and pat latke mixture into 1/2-inch
patties.  Fry for 5 minutes on each side until golden & crispy.
