IRISH POTATOES 8 medium potatoes, boiled, peeled and quartered 1/2 cup finely chopped celery 1/2 cup finely chopped onion 1/2 stick (1/4 cup) butter 1/2 cup sour cream 1 tblsp sugar 1 1/2 tsp thyme 3/4 tsp basil salt and pepper to taste Mash the above ingredients well.
