Herbed Zucchini

Herbed Zucchini
Yield: 4 to 5 servings.
 
3 medium zucchini squash
1 small onion finely chopped
1 small bunch of parsley finely chopped
Several basil leaves finely chopped or use 1 tsp dry
4 cloves garlic minced
Extra virgin olive oil
salt to taste
freshly grated black pepper to taste
 
Wash zucchini and leave on skin. Cut into thick finger size pieces.
Cover with water in a pan and bring to a boil. Remove from heat
and keep covered until zucchini is tender but not mushy ( about
another 5 minutes or so ). Remove zucchini and drain well. Place
hot zucchini into a serving bowl. Add finely grated onion, minced
garlic, parsley, basil and enough olive oil to coat and flavor.
Combine gently. Season with salt and pepper to taste. Serve hot or
warm.
