Harvard Beets 1/4 cup sugar 1 tbsp cornstarch 1/2 tsp salt 1/3 cup vinegar 1 tbsp butter 1 tsp onion, minced 3 cups cooked beets, sliced In a medium saucepan, combine the first three ingredients. Slowly stir in the vinegar, then add the butter and onion. Place over medium heat and cook until thickened, stirring constantly. Reduce the heat to low and add the beets and cook until just heated through, stirring occasionally. Printable version: harvard-beets04.txt.
