Fried Zucchini Rounds Yield: 12 rounds 1/3 cup biscuit mix 1/4 cup Parmesan cheese, grated 1/8 teaspoon pepper 2 eggs, slightly beaten 2 cups (2 medium) zucchini, shredder, unpeeled 2 tablespoons butter or oleo Combine biscuit mix, cheese, and pepper. Stir in eggs just till mixture is moistened. Fold in zucchini. In 10-inch skillet, melt oleo over medium heat. Using 2 Tablespoons for each round, cook about 2 to 3 minutes on each side or until brown. Printable version: fried-zucchini06.txt.
