FRENCH-FRIED ONIONS Yield: 4 to 6 servings. 2 1/2 to 3 lbs. shortening 4 to 5 ( about 1 lb.) onions 1 cup milk 1 teaspoon salt 1 cup flour 2 tablespoons salt Place shortening in saucepan, heat to about 380 degrees F. Peel and slice onions (about 1/4-inch thick); separate into rings. Add 1 teaspoon salt to milk and soak rings ; 15 to 20 minutes. Combine flour with 2 tablespoon salt. Drain ring well and coat with salted flour. Shake off excess flour. When shortening is heated to correct temper-ature, place rings into fry basket. Lower it carefully. Fry about 2 minutes.
