Fried Celeryroot Slices 1 celery root, about 2.5 lb 1/2 lemon, juiced 2 eggs breadcrumbs flour butter or oil for frying salt and pepper to taste Brush and clean celery root until all mud is removed. Submerge root in water in pan and cook root until done. +/- 1 hour. Peel root and cut in approx. 1/4 inch slices Season with the salt, pepper, and lemon juice Set aside for 10 min. Heat butter or oil and dip slices in flower, eggwash and breadcrumbs. Fry the slices in the hot butter or oil until golden. Serve with tomato sauce, or remoulade sauce and mashed potatoes.
