Elderflower Fritters
 
20 Elderflower heads

1 egg
4 oz flour
1 tablespoon water
1 tablespoon oil
pinch salt
grated lemon zest
lemon juice, maple syrup or sugar and cinnamon to taste
oil for deep-frying

Separate the egg. Blend the egg yolk with the oil, water, lemon
zest and juice until smooth. Add the mix to the sifted flour. Add
more liquid if necessary to make a thick batter. Allow the mix to
rest for 1/2 hour. Beat the eggwhite stiff and gently fold it into
the batter. Dip each flower head into the batter and deep-fry until
golden-brown. Drain and serve with maple syrup or a blend of cinnamon
and sugar.
