Creamed Onions

2 jars pearl onions (or equivalent amount fresh cooked)
3 Tbsp Flour 
3 Tbsp butter
1 cup. evaporated milk 
1 cup. juice from the jars of onions
1 cup bread crumbs 
melted butter

Boil the jarred onions for about 5 minutes to insure that they are
cooked through..  Drain them and reserve the liquid.  Put the
drained onions in a casserole dish .1-1/2 qt size should be OK.
Prepare Basic White Sauce.  Melt butter in pan.  Stir in flour.
Cook a few minutes.  Whisk in evaporated milk and onion liquid.
Cook to thicken

Pour the white sauce over the onions in casserole dish.  Stir a
bit.  Mix together 1 cup bread crumbs with a little melted butter.
Sprinkle that over the top.  Bake at 350 (or whatever temperuture
the rest of the dinner is being cooked at) for approx. 30 minutes
to heat through, brown the crumb topping and blend the flavors.
I suppose if you wanted them cheesy you could just stir in the
cheese of choice into the white sauce.
