Corn Fritters
Serves 4

4 ears corn (two cut and grate two)
3 Tbsp corn meal
3 Tbsp flour
2 tablespoon heavy cream
1/2 teaspoon salt
1 egg
pinch cayenne
1 shallot, minced
1/4 cup vegetable oil 

Cut the kernels off two ears of corn and grate the kernels off two
ears.  Then with the back of a knife scrape down all four of the
ears for any extra remaining milk. Gently mix the corn meal, flour,
cream, and rest of ingredients except oil.

Heat oil. When oil is very hot add the mixture by 1 rounded tablespoon
at a time. Fry for about 1 minute on each side.  Drain and serve
with maple syrup or catsup, or tartar sauce or a glass of tea.
