Cheesy Potatoes 5-6 medium potatoes, peeled, sliced or diced 4 strips bacon, diced 1/3 cup onion, chopped 2 cups shredded cheddar cheese salt and pepper to taste 2 tablespoons melted margarine Cook bacon 3 minutes or until partially cooked. Combine potatoes, bacon, onion, salt and pepper in 2 quart dish. Drizzle with melted margarine. Cook, covered 13-15 minutes, stirring once, until potatoes are tender. Stir in cheese.
