Swiss Chard With Peanuts and Chile Makes 4 to 6 servings 2 pounds fresh Swiss chard, washed, thick stems removed 2 tablespoons vegetable oil 1/2 onion, finely chopped 2 plum tomatoes, chopped 1 clove garlic, minced 1 tablespoon minced jalapeno chile (preferably red) 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup finely chopped roasted, salted peanuts Boil chard in large pot of boiling water for 10 minutes. Drain in colander and rinse with cold water. Press out excess water and pat dry on paper towels. Pureein food processor. Add oil to large skillet and saute onion, tomatoes, garlic, chile, salt and pepper for 10 minutes on medium heat. Add pureed chard and chopped peanuts and stir to blend. Continue cooking over medium heat for 2 minutes and serve. Printable version: chard-peanuts.txt.
