Celery Sicilienne Servings: 4 1 celery root of approx. 1 lb. 1 artichoke or more 1 red apple 1 tomato Clean celery root and slice into matchsticks and place in a bowl of water with some vinegar or lemon juice. Heat a pan of water with some vinegar to the boil. Place a colander in the sink. Drain root sticks and put in the pan with the boiling water, bring the water back to a rapid boil and drain the sticks into the colander. Rinse celery root sticks and drain on paper towel or tea towel. Cook artichoke(s) until done and drain. Cut off bottom of artichoke and chop in small squares. Peel and chop apple in like wise pieces. Peel and seed tomato and chop also in small pieces. Mix equal portion of root sticks and artichoke pieces, apple and tomato. Drizzle with an oil-lemon juice dressing.
