CAULIFLOWER IN GREEN SAUCE 1 cauliflower, steamed 60g (2 oz) butter or oil 1 cup finely shredded green leaves of leek or spring onion (scallion) 2 cups frozen peas 1 sprig fresh mint 1/2 teaspoon sugar salt and pepper to taste Gently cook the leek or onion leaves in the melted butter or oil, until soft. Add the peas, mint, sugar and seasonings, and cook, covered, for 7 - 8 minutes. Push through a sieve or puree in a blender or food processor, adding a little of the cooking liquid if necessary. Reheat and spoon over the steamed cauliflower in a serving dish. Serve hot. serves 6 as an entree or side dish. Printable version: cauli-green-sauce.txt.
