Cassava Pancakes with Chives 1 pound fresh sweet cassava 2 tablespoons chopped fresh chives 1 egg beaten salt and pepper 1/2 cup fresh white breadcrumbs 6 tablespoons butter Boil cassava until easily pierced wtih fork. Drain well. Puree. Stir in chives, then egg. Season generously with salt and pepper. Form into 3 inch patties 1/2 inch thick. Coat with breadcrumbs. Melt butter in skillet over medium high heat. Add patties and cook on both sides until golden brown, turning once. Drain on paper towels; serve hot. Note: Cassava is a tropical tuber used in African, Caribbean and Latin American cooking (also called yuca) and available at Latin American markets.
