Cassava Pancakes with Chives

1 pound fresh sweet cassava

2 tablespoons chopped fresh chives
1 egg beaten
salt and pepper
1/2 cup fresh white breadcrumbs
6 tablespoons butter

Boil cassava until easily pierced wtih fork.  Drain well.  Puree.
Stir in chives, then egg.  Season generously with salt and pepper.
Form into 3 inch patties 1/2 inch thick.  Coat with breadcrumbs.

Melt butter in skillet over medium high heat.  Add patties and cook
on both sides until golden brown, turning once.  Drain on paper
towels; serve hot.

Note: Cassava is a tropical tuber used in African, Caribbean and
Latin American cooking (also called yuca) and available at Latin
American markets.  Not to be confused with bitter cassava, which
is poisonous unless cooked.
