Caramel Sweet Potatoes

8 medium sweet potatoes, cooked and peeled
1 cup butter
2 cups brown sugar
1/2 cup water
1/2 cup shredded coconut

Cut sweet potatoes into 1-inch slices.  Combine butter, brown sugar
and water in saucepan; cookon medium heat until mixture thickens,
about 10 minutes.  Add sweet potatoes; lower heat and simmer 20
minutes.  Sprinkle with shredded coconut before serving.
