Baked Sweet Potatoes Dice skinned sweet potatoes (4 or 5) into 1/2" cubes. Mix with 1/4 c. olive oil. Sprinkle with 2-3 Tbs. fresh rosemary. Bake in a 375F oven for 30-40 minutes (until potatoes are soft, but still have a degree of firmness and shape) turning every 15 minutes or so. Variation: Caramelized onions may be added. Caramelized shallots might be great too. Try using melted butter instead of oil, although it might over-brown in the oven. Printable version: baked-sw-pots02.txt.
