Melanzane al Forno
(Sicilian Baked Aubergines)
6 Aubergines
3 or 4 cloves garlic
parsley
olive oil
salt
pepper
Slice garlic cloves in lengthwise halves. Make some holes on the
whole aubergines and place garlic in them. Bake and when ready,
peel and cube them. Dress in a bowl with plenty of olive oil,
parsley, salt and pepper.
