Baked Bok Choy With Gruyere Serves 4 1 1/2 pounds bok choy, washed and drained 1 cup chicken broth 1 tablespoons butter 1 1/2 tablespoons flour 2 teaspoons Dijon mustard 1 cup (about 2 ounces) grated Gruyere cheese Salt to taste few drops hot-pepper sauce Heat oven to 400 degrees. Separate bok-choy stalks from leaves. Cut stalks into 1/2-inch slices (to yield about 4 cups). Combine stalks and broth in a large , shallow baking dish. Cover with foil and bake 35 minutes, at which point stalks still will be crisp. Meanwhile, coarsely chop leaves. Add to stalks and stir. Bake 10 minutes, or until leaves are wilted. Heat butter in a small saucepan. Add flour and stir 1 minute over medium-low heat. Whisk in mustard. Pour broth from bok-choy baking pan into flour mixture. Increase heat to high and whisk until sauce thickens slightly. Add cheese and stir until smooth. Add salt and hot sauce to taste. Pour cheese sauce over bok choy.
