Recipe Archives->Spanish->Spinach Chickpeas
SPINACH AND CHICK PEAS (Southern Spain) 1 box frozen cut leaf spinach 1/2 can chick peas with some liquid 1/2 onion 3-5 cloves garlic olive oil salt chili powder ground cumin Defrost the spinach and drain off excess water. Dice or mince the onion, but not finely. Saute/fry the onions in olive oil until they have browned somewhat,and have softened or have become clear. Mince the garlic. Saute the garlic in olive oil at moderately high heat. When the garlic clearly starts to brown add the spinach and cook til done. Turn and mix the spinach often. Depending on how much you are making you may need to do the garlic and spinach in several batches. Add chick peas and a little of their liquid directly to pan. Add salt, chili powder and cumin to taste. Use about two parts of chili powder to one part of cumin. Off hand, I think I end up with about one rounded tablespoon of this blend per box of spinach.
