Croquetas de Bacalo (Spanish Salt Cod Croquettes Tapas) 200g/7oz bacalo/salt cod (unsoaked weight) 35g/1.5 oz plain flour 2 to 3 cloves garlic large handful chopped parsley 600ml/1 pint milk olive oil breadcrumbs Soak the salt cod over night, changing the water frequently. Break up the soaked salt cod into small flakes. Fry garlic and parsley in a little olive oil. Add the salt cod and continue to cook for 1--2 minutes. Add the flour and mix well before adding the milk slowly with stirring to give a thick paste, which should be cooked briefly. When cool, shape into small oblongs, coat in breacrumbs and fry gently in oil. Printable version: cod-croquettes.txt.
