Spanish White Bean Salad
Serves 8

1 1/2 lbs white beans, canned or fresh cooked, like cannelini
2 large ripe tomatoes, cubed
24 Spanish olives, green, sliced
1/4 cup tarragon, minced (or 2 teaspoons dried)
6 green onions, chopped
2/3 cup extra virgin olive oil
4 to 6 tablespoons red wine vinegar
2 cloves garlic, minced
Salt and pepper to taste

In large mixing bowl combine beans (rinsed if canned) tomatoes,
olives, tarragon and green onions.  In separate bowl, whisk together
remaining ingredients, or shake in a jar.  Fold dressing into bean
mixture, taste for seasoning and let marinate in refrigerator
several hours or overnight.  Nice on a bed of lettuce.
