Bacalhau (Salt Cod)

2lbs salt cod
6 med potatoes, sliced
4 med onions, sliced
1 6oz pimentos
1/2 can large black olives, pitted
2 20 oz can tomatoes
pepper

De salt cod as per instructions on box or if you have access to
salt cod not in a box, cover with water, changing about every couple
of hours or overnite, to desalt.  Taste the water to see if is to
your satisfaction.  Flake cod into large pieces.  Slice potatoes
and onions.  Place potatoes, onions, pimento  and olives in separate
piles on wax paper.  Oil an ample casserole and layer with 1/2 half
cod, cover with layer of potatoes, onions, pimento, olives and
tomatoes.  Repeat, but save some olives and pimento for garnish.
Dribble oil evenly over all, sprinkle with pepper, bake 350 for 1
1/2 hours or til tender.
