Brown Sauce 1/4 cup soy sauce 1 1/4 cups water 2 tbs. grated ginger 5 cloves garlic, minced 1/2 to 1 tsp. sesame oil 1 tbs. sugar 1 tbs. plus 1 tsp. cider vinegar 2 tbs. dry sherry or sake 3 tbs. cornstarch dried red pepper, optional Combine all ingredients except cornstarch in a small bowl or large measuring cup.
