Mushroom Sherry Sauce 1 tablespoon olive oil 1/4 cup minced onions 1 medium clove garlic, minced 3/4 pound mushrooms, trimmed and thinly sliced 2 tablespoons plus 2 teaspoons flour 1/2 teaspoons herbes de provence 1/4 teaspoon salt ground pepper to taste 1/2 cup dry sherry 1 1/4 cups vegetable stock Saute onions and garlic, about 5 minutes. Stir in mushrooms and saute until they start to give off their liquid, about 5 minutes. Stir in flour, herbes, salt and pepper, then add sherry and cook 1 minute. Stir in the veg stock and simmer an additional 5 minutes. Printable version: mushroom-sherry01.txt.
