Mushroom Tarragon Steak Sauce 2 lbs. sliced mushrooms 1/4 cup butter 3 Tbsp Soy Sauce (Kikkoman seems to work best) 2 Tbsp Worcestershire Sauce 1-2 TbspTarragon (crushed) 1/2 tsp. corn starch 1/3 cup water Melt butter in a medium saute pan. Add sliced mushrooms cover tightly. Simmer until mushrooms are tender and juice is maximized. Add Soy Sauce and Worcestershire sauce. Cover and simmer for 2 minutes or so to infuse the flavors. Add Tarragon to mushroom sauce and mix in well but with tenderness for the mushrooms. Cover and simmer for 1 or 2 minutes. Dissolve corn starch in water and add to simmering sauce. Stir gently until thickened. Spoon over freshly grilled steaks.
