Mint Sauce Concentrate
1 lb sugar
1 qt vinegar
washed, finely chopped mint leaves
Dissolve sugar in vinegar. Boil 10 minutes. Slowly add washed,
finely chopped mint leaves. Keep adding leaves until the consistency
of jam. Bottle in sterile jars. (The quantities may be reduced if
you don't have a lot of mint leaves: by half or even to one-quarter.)
To use: Put a spoonful if concentrate in a dish and add hot water
to form sauce.
