Chinese Garlic Sauce 2 tablespoons peanut oil 2 tablespoons shredded garlic (use a mincer) a little ginger 3 tablespoons oyster sauce 1/2 cup chicken stock or canned broth Heat a wok or frying pan over high heat until it is hot. Add the oil and wait until it is smoking, add the garlic and ginger and leave for a minute or so. Then add the oyster sauce and stock simmering for another few minutes.
