BRANDY BLUE CHEESE SAUCE

40g butter
1 medium onion, chopped
2 Tbs flour
250mls chicken stock
125ml milk
1 Tbs brandy
200g blue cheese, crumbled
1 clove garlic, crushed

Heat the butter in a pan, add onion, cook, stirring until soft.
Add flour, cook, stirring until bubbling.  Remove from the heat
and gradually stir in stock, milk and brandy, stir over heat until
it comes to the boil and thickens slightly.  Put into a processor
or blender with the cheese and garlic and process until smooth.
Serve with any type of beef, roasts, steaks etc.

It is supposed to be good over pasta too.
