Turkey-Broccoli Melt Yield: 4 servings 1 (16-ounce) package frozen broccoli spears 1 tablespoon plus 1 teaspoon prepared mustard 4 (1-ounce) slices whole wheat bread, toasted 4 (1-ounce) slices deli turkey breast 1/4 cup (1 ounce) shredded reduced-fat sharp Cheddar cheese 1 cup alfalfa sprouts Cook broccoli according to package directions. Drain; set aside. Spread 1 teaspoon mustard over each bread slice; place on a baking sheet. Top each with 1 turkey slice, 3 broccoli spears, and 1 tablespoon cheese. Broil 3 inches from heat 1-1/2 minutes. Top with 1/4 cup sprouts. Serve immediately. Yield: 4 sandwiches. Printable version: broc-turkey-melt.txt.
